    (this is an old NO fail,
    family recipe
    from the 1800's)

    We grew up on pan_cakes aka PANCAKEs !!!

    3 tbsp of sugar in the raw or pure organic cane sugar
    (you can use white sugar, but, THAT is NOT the old fashioned way to making pancakes)

    1 1/2 cups of all purpose flour

    3 tsp. of baking powder (without alum)

    1/2 tsp of sea salt

    1 3/4 or. 1.75 cups milk / butter milk
    1 slightly beaten egg
    1 teaspoon REAL vanilla

    Melt 3 tsb. of REAL butter in skillet
    and, then after melted,
    mix it, into the batter

    Let the mixed batter
    stand for 5 minutes before cooking

    it take about 2-3 minutes per side
    on a hot griddle at 400 degrees F

    IF YOU WANT TO DO ONION RINGS....
    use the same batter,
    just don't use vanilla,
    add 1/2 tsp. of onion powder
    and, utilise ice cold milk, or cold buttermilk
    when you make the batter.

    Preheat a deep fryer and wow!!!
    Nice and simple but incredibly yummmmmmmmy!

    Coconut shrimps
    use the same batter
    except utilise coconut oil, instead of butter
    and, use vanilla, instead of onion powder
    USE 3 tsp. of butter
    (or, 3 tsb of coconut oil/ or, split it
    1 1/2 tsp of coconut oil / and, 1 1/2 tsp of butter)
    FRYING in coconut oil, is amasing !!!

    and, then, after dipping in batter,
    roll in coconut - and, deep fry

    WAFFLES
    2 eggs
    1 1/4 c. milk/ OR buttermilk
    1 tsp. vanilla
    2 tbsp. melted butter
    1 3/4 c. flower
    1 tsp of baking powder

    Preheat waffle iron - the iron is what makes a waffle a waffle!

    Separate the eggs.
    Beat egg whites until they form firm peaks.
    Beat egg yolks, milk and melted butter.
    Combine that mixture with the dry ingredients,
    then, Fold in the beaten egg whites.
    and, Spoon it evenly on the waffle iron and cook.

    4 eggs, 2 tsp vanilla, 1 tbsp sugar in the raw, 1 tbsp melted butter, 4 oz softened cream cheese, (mix with hand blender)
    4 tbsp coconut flour, 1 1/2 tsp; baking power,
    (mix til smooth)
    spray with coconut oil on waffle maker

    The riper the banana the better as they turn out sweet without the need to add sugar.
    For topping, you can drizzle a little raw honey, pure maple syrup or even great with nut butter.

    Pannukakku – Finnish Pancake For Weekend Breakfast

    So, this pancake is baked.

    However, it is extremely easy so no baking related excuse can be accepted, anyone can do it.

    When I was doing my master studies in Aalto University, we used to get these pancakes
    on some Thursdays with pea soup.

    I don’t remember if it was every Thursday or some Thursdays to be honest,
    because I didn’t use to eat it. For me, pancake is a very weekend breakfast thing.

    But this doesn’t mean that this pancake is not tasty – oh no no, it is delicious.

    You might even like it more than regular pancakes!

    What I like most about it is in making actually
    – you prepare the batter and then pour it in the oven dish.

    After that it’s all about the oven work.

    You don’t have to stand in front of the stove,
    making little pancakes one by one.

    So especially if you’re feeling lazy, this is the pancake to make.

    Pannukakku is very delicious all by itself, however, like other pancakes,
    it tastes great with some toppings.

    I like jam and fresh fruits, like berries, and a little bit of powder sugar.
    You can also top it with cream, sour cream, creme fraîche.

    Ingredients:

    Difficulty: ★☆☆ (Easy)
    (makes 1 big pancake in 25×35 oven dish. Good for 4-6 people.)

    150 gr. all-purpose flour
    1 tsp baking powder
    2 tbsp granulated white sugar
    a pinch of salt
    4 eggs
    6 dl. milk
    1 tsp ground cardamom
    (This is my addition. It is not put in this pancake traditionally,
    but I find cardamom adds a nice touch.)
    about 25 gr. melted butter

    To serve:
    jam (I used fig jam)
    fresh fruits, like berries
    powdered sugar
    cream

    1. In a big mixing bowl, put flour, baking powder, sugar and salt, whisk.

    2. Make a well in the middle of flour mixture, put 4 eggs in the middle and whisk thoroughly.

    3. Add milk and cardamom and continue whisking until all ingredients are incorporated.

    Cover the bowl with stretch film and let it sit for 30 minutes.

    4. Preheat the oven to 180C and cover the base and sides of your oven dish with melted butter.

    5. Pour the batter in the oven dish and put the dish in the oven, in upper rack.

    Bake for 35-40 minutes, until it rises a little and surface gets golden brown.

    Serve with toppings of your choice. Enjoy!
