    Ingredients for donuts
    500 g flour -
    1 cup of warm milk - 250 ml
    4 yolks of medium eggs
    40 g of sugar - about 3 full tablespoons
    25 g of fresh yeast or 7 g of dry yeast
    50 g melted and cooled
    pinch of sea salt
    2 tablespoons of spirit or rum - may be omitted

    1 liter of oil or lard for frying donuts

    Ingredients for lemon icing
    3 tablespoons of lemon juice - 18 g
    10 tablespoons of powdered sugar - 120 g

    Other extras
    80 g of any marmalade for stuffing donuts
    80 g of candied fruit peel

    Mix yeast, half of warm milk, 1 tbsp sugar and few tbsp of flour.

    Set aside for few mins.

    In your mixer with a hook attachment add the yeast mixture
    and all the other ingredients. Knead the dough for about 5-8min.

    Cover and put in warm place to raise for about an hour.

    After the dough has risen, roll it out,
    make sure it’s not rolled out too thin.

    Using a cookie cutter cut out your doughnuts.

    Cover with a towel and let them rise for another 15 min.

    In that time warm up your oil.

    Once your oil is hot (175C), fry your doughnuts until golden.

    About 2-3 min per side.

    Rest the doughnuts on paper towel to absorb the extra oil.

    Once they cool down, glaze them and devour

    25fe. 50g (3 tbsp) butter
    25fe. Granulated sugar for coating

    25fe. In a bowl mix together almond milk with sugar, yeast, and egg.
    25fe. Add in flour and salt.
    25fe. Cover for 20 minutes.
    25fe. Mix in butter and let it rise for 1 hour.
    25fe. Roll out the dough and divide it into 12 pieces, roll the ends and seal them.
    25fe. Cover for 15 minutes and fry in the hot oil until golden brown.
    25fe. Cover with sugar.
